Favorite Ingredients Friday (Pineapple-Onion Pork Chops)

I'm always looking for new ways to prepare pork. This recipe makes the pork especially tender and moist! If you try it, let me know what you think!
Pineapple-Onion Pork Chops
Ingredients:
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 6 (3/4 inch thick) boneless pork loin chops
- 3 tablespoons butter or margarine
- 1/2 cup water
- 1 medium onion, sliced
- 1 1/2 cups pineapple juice
- 2 tablespoons brown sugar
- 2 tablespoons honey mustard
Preparation:
In a large re-sealable plastic bag, combine the flour, salt and pepper. Add pork chops and shake to coat. In a skillet, brown the chops on both sides in butter. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Add water to dish. Place onion over chops. Cover and bake at 350 degrees F for 20 minutes.
Meanwhile, in a saucepan, combine the pineapple juice, brown sugar and mustard. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Pour over pork. Bake, uncovered, for 5-10 minutes or until meat juices run clear.

YUM! My husband would hurt some one for a taste, probably, although he's not prone to violence!

Looks good! I love pork chops, and my toddler loves pineapple. I'll be trying this soon.
I used the pork chop recipe tonight. It was good, but would have been better if I'd had the larger can of pineapple that I thought I did -- I ended up using water to reach the 1-1/2 cups of liquid, but I think more pineapple juice would obviously have tasted better. I did bake the pineapple slices from the can along with the pork chops and onions, which turned out well. Thanks for the recipe!
