Good Friday to you all! It's time for a special Favorite Ingredients Friday Salad Edition! Many of you gave me some wonderful recipes last year. I can't wait to see what you come up with this time!
The recipe I'm sharing is from a neighbor back in the small Nebraska town that I grew up in! The neighbor's name was Dolly Miller. She's no longer alive, but I remember her and I'm so glad my mom got this recipe from her years ago and shared it with me. Each time I make this recipe, I'm reminded of home, childhood, and Dolly Miller!
Ingredients:
12 oz pasta (I like the rotini the best)
2 cups mayo (Helmans is great for this)
Dorothy Lynch salad dressing to taste (this orginated in Columbus, NE and can be purchased online if it's not in your store)
1 green pepper, diced
1/3 c. sliced green onion
2 tomatoes
Preparation:
Mix all ingredients in a large bowl. Refrigerate for at least 1 hour before serving, but longer is better!

Good Friday to you all! It's time for a Favorite Ingredients Friday Appetizers & Snacks edition! I enjoyed the recipes you all shared with me last year and can't wait to see what you come up with today.

Ingredients:
6 dried figs, halved
1/2 cup simple syrup, recipe follows
2 tablespoons brandy
1/4 cup chopped toasted hazelnuts
24 baguette slices
Olive oil, for drizzling
1/2 cup grated Pecorino Romano
1 large apple (Granny Smith or Braeburn), thinly sliced into 24 slices
1/4 pound chunk Pecorino Romano, for shaving 24 pieces
Preparation:
Preheat the oven to 375 degrees F.
Place a small saucepan over medium heat. Add the figs, simple syrup, and brandy. Bring the mixture up to a simmer. Turn off the heat and let sit for 10 minutes. Place the fig mixture and the hazelnuts in a food processor and blend, pulsing a few times, until pureed. Set aside.
Place the baguette slices on a heavy baking sheet. Drizzle with olive oil. Top each slice with 1 teaspoon grated Pecorino Romano. Bake until the bread is toasted and the cheese is melted and golden, about 7 minutes.
Top each slice of toast with 2 teaspoons of fig jam, a slice of apple and a piece of shaved Pecorino Romano. Transfer the toasts to a serving platter and serve.
Simple syrup:
1/2 cup water
1 cup sugar
In a saucepan combine water and sugar over medium heat. Bring to a boil, reduce heat and simmer for 5 minutes, until the sugar has dissolved. Take pan off heat and cool the syrup. Any extra cooled syrup can be saved in an airtight container in the refrigerator

With the summer heat, I find myself craving smoothies! Oronzo and the kids enjoy them too. This smoothie recipe is one I found on a fun website appropriately named Smoothie Recipes.
1 1/2 banana cut into chunks and frozen
2 tablespoons of chocolate syrup or your favorite melted chocolate
1/2 cup of yogurt
1 cup of milk
ice (if needed to thicken it up)
Directions
Combine all ingredients in a blender until bananas are really mixed and chocolate is swirled. Add ice cubes if you need to thicken it up! Now you have your chocolate and banana smoothie.

Good Friday to you all! It's time for a special Favorite Ingredients Friday Healthy Eating edition!
I got some wonderful ideas from the Healthy Edition that I hosted last year but I'm hoping for me this year too!

The recipe I'm sharing I found on Mayoclinic.com! It makes a wonderful side dish for a healthy meal.
Steamed Summer Squash with warm leek vinaigrette
Ingredients
2 yellow crookneck squash, about 1/2 pound total weight
2 zucchini, about 1/2 pound total weight
For the vinaigrette:
2 tablespoons extra-virgin olive oil
1 leek, including tender green top, finely chopped
1 tablespoon vegetable stock or broth
1 tablespoon rice vinegar
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Preparation
Trim the stems from the yellow squash and zucchini. Halve lengthwise and then cut the halves crosswise on the diagonal into slices 1/2-inch thick. Set aside.
To make the vinaigrette, in a saucepan, heat the olive oil over medium heat. Add the leek and saute until soft, 10 to 12 minutes. Remove from heat and stir in the vegetable stock, vinegar, lemon juice, salt and pepper. Cover and keep warm.
Meanwhile, in a large pot fitted with a steamer basket, bring 1 inch of water to a boil. Add the yellow squash and zucchini, cover, and steam until tender, about 10 minutes.
Transfer the squash to a warmed serving dish. Add the vinaigrette and toss gently to mix. Serve immediately.

This is a fun little snack that I found on on All Recipes.com. The kids and I really enjoy this. Oronzo...not so much. He dislikes celery.

1 large stalk celery, cut into 3 pieces
3 tablespoons peanut butter
1 teaspoon ground cinnamon
2 tablespoons raisins
Directions
1. Place the celery pieces on a clean surface, hollow part facing up, and sprinkle evenly with cinnamon. Spoon peanut butter into the hollow, and arrange raisins on top.

Happy Friday! It's time for my Favorite Ingredients Friday Lunch Box Meals Edition!
The sandwhich recipe I'm about to share with you is one that I found on a fun blog, Parents.com. The kids actually really enjoy this. I made them test it out at home before I packed it for their lunch.

2 slices whole wheat bread
almond butter
slivered almonds
dried cranberries
Assemble and use a large cookie cutter to cut into a shape before putting it into the lunch box!

This has become one of my favorite pasta dishes, especially since we planted cherry tomato plants in our backyard garden. I found this recipe on The Italian Chef. Enjoy!
1/4 cup olive oil
2 large garlic cloves sliced thin
1 pint grape or cherry tomatoes, sliced in half
1/2 teaspoon red pepper flakes
2 large basil leaves, chopped
salt to taste
1 pound spaghettini pasta
freshly grated Parmagiano-Reggiano cheese for serving
Directions
1. Add olive oil and garlic to a large saute pan over medium heat. Cook until garlic is lightly browned, then add the
sliced tomatoes, red pepper flake, basil, and salt.
2. Saute the tomatoes until they are softened and have started to release their juices, about 5 minutes.
3. Meanwhile, bring a pot of liberally salted water to a boil, add pasta and cook until al dente.
4. Strain pasta and transfer to the saute pan with the sauce and toss until completely coated.
5. Dish out into individual serving bowls and serve with grated Parmagiano-Reggiano.

Happy Friday! It's time for my Favorite Ingredients Friday WeightWatchers Edition! Click here to see last year's Weight Watcher's recipe submissions.
The recipe I'm about to share with you is one that I found on a fun blog, Recipe Goldmine. The kids love this (so do I)!
This no-fuss pancake inflates like a balloon in the oven but sinks immediately on cooling, forming an inviting nest for toppings like yogurt or sliced pears.
1 spray butter-flavored cooking spray
1/2 cup fat-free skim milk
1/2 cup all-purpose flour
2 tablespoons all-purpose flour
1/2 cup unsweetened applesauce
1/2 cup fat-free egg substitute
1 tablespoon dark molasses
1 tablespoon sugar
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon table salt
1 cup low-fat lemon yogurt
Heat oven to 425 degrees F. Coat an ovenproof nonstick skillet with cooking spray.
Stir together all ingredients, except yogurt, in a medium bowl; whisk until batter is lump-free. (Be careful not to overbeat.) Pour batter into skillet. Bake until pancake is firm but puffed up, about 12 minutes.
Immediately remove pancake from oven (it will deflate quickly) and cut into 4 wedges. Spoon one wedge onto each plate and top with 1/4 cup of yogurt.
Servings: 4 - points 4

Happy Friday! It's time for my Favorite Ingredients Friday Greatest Hits Edition! I'd like you to share one of your favorite FIF recipes that you've posted in the past. If you're brand new to FIF, just post one of your favorite family recipes.
So, one of my favorite past FIF recipe has to be this one that I found on joyofbaking.com:

Ingredients
- 1 cup (115 grams)pecans, toasted and coarsely chopped (could also use walnuts or hazelnuts)
- 1/2 cup (56 grams) flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 pound (450 grams)bittersweet or semisweet chocolate, coarsely chopped
- 1/4 cup (57 grams) unsalted butter, melted
- 1 3/4 cups (350 grams) granulated white sugar
- 4 large eggs, room temperature
- 1 tablespoon pure vanilla extract
- 1 cup (170 grams) semisweet dark chocolate chips
- 1 cup (170 grams) white chocolate chips
Preparation
- Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Place the pecans on a baking sheet and toast for 8-10 minutes, or until lightly brown and fragrant. Let nuts cool and then chop coarsely. Set aside.
- Sift or whisk together the flour, baking powder, and salt, into small bowl. Set aside.
- Melt the chocolate and butter in a stainless steel bowl placed over a saucepan of simmering water, stirring until smooth. Remove from heat and set aside.
- In the bowl of your electric mixer (or with a hand mixer), beat the sugar and eggs until pale yellow and thick, about 5 minutes. When you slowly raise the beaters the batter will fall back into the bowl in slow ribbons. Beat in the melted chocolate mixture and vanilla extract. Fold in the dry ingredients to the chocolate batter and mix only until incorporated. Stir in the chocolate chips and nuts. Cover with plastic wrap and refrigerate the batter until firm, about 30 minutes.
- Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Line two baking sheets with parchment paper.
- Drop batter by 1/4 cupfuls onto prepared cookie sheets, spacing evenly. With moist fingers, press batter to form 3 1/2 (9 cm) to 4 inch (10 cm) rounds. Bake cookies about 12 - 14 minutes or until the tops of the cookies become dry and cracked, but are still shiny. Do not overbake these cookies.
- Remove from oven and place baking pan on a wire rack to cool. When cookies are firm, remove from baking pan and let completely cool on rack.
- These cookies are best the day they are baked but can be stored in an airtight container at room temperature for a few days.
- Makes about 24 large cookies.

Happy Friday! It's time for my Favorite Ingredients Friday Spreads & Dips Edition!
We attend family-oriented gatherings quite often and I'd love to have some tried and true spread and/or dip recipes to make. I can't wait to see what you all come up with.
The recipe I'm about to share is something I found on Kraftfoods.com. It's quick, simple, and yummy. Enjoy!

Ingredients:
4 cups JET-PUFFED Miniature Marshmallows
25 KRAFT Caramels (about 1/2 of 14-oz. bag)
1/4 cup evaporated milk
Directions:
Place marshmallows, caramels and evaporated milk in medium saucepan; cook on low heat until marshmallows are completely melted and mixture is well blended, stirring frequently. Pour into serving bowl. Cool slightly.
SERVE warm as a dip with assorted cookies and fresh fruit dippers.
SUBSTITUTE Use 1/4 cup milk in place of evaporated milk when preparing this sweet dip.

As many of you know, I'm trying really hard to eat healthier and exercise to get my high cholesterol levels down. I have a follow-up appointment with my doctor in July.
Recently the American Heart Association sent me a small paperback cookbook called, Light & Easy Recipes. I love it! The recipe I'm sharing with you today is from this cookbook and it's yummy!

Fish Fillets with Lemon Crumb Topping
Ingredients
Cooking spray
2 medium lemons
4 flounder, snapper, or tilapia fillets (about 4 oz each)
2 slices reduced-calorie whole wheat bread
1/8 tsp garlic powder
1/8 tsp cayenne (optional)
1/4 tsp extra virgin olive oil
Directions
1. Preheat oven to 425*F. Line a large baking sheet with aluminum foil. Lightly spray with cooking spray.
2. Quarter 1 lemon and set aside. Grate enough zest from the remaining lemon to measure 1/2 tsp. Set the zest aside. Cut the lemon crosswise into 8 slices.
3. Place 2 lemon slices side by side on the baking sheet. Place a fish fillet on the lemon slices. Repeat with the remaining lemon slices and fish, spacing the portions at least 2" apart.
4. In a food processor, pulse the bread to make coarse crumbs. Transfer to a medium bowl. Stir in the reserved lemon zest, garlic powder, cayenne, and paprika. Drizzle with 1 Tbsp plus 1 tsp olive oil. Stir gently to blend. Spoon over each fillet.
5. Bake for 12 minutes, or until the fish flakes easily when tested with a fork and the topping is browned. Transfer to four plates.
6. Drizzle the remaining 2 tsp olive oil over the fish. Serve with the reserved lemon wedges to squeeze over the fish.

The recipe I'm about to share is one that was given to me during my bridal shower, 6 years ago! I have to tell you, I love this recipe because it's quick, easy, and delicious. I hope you like it!

Ingredients:
4 cups sliced peaches
Directions:
Prepare peaches by mixing with 1 cup sugar.
Mix together rest of ingredients and pour over melted butter. Do not mix!
*Note: This is also great with blackberries.

So, a couple of weeks ago I was searching online for recipes that called for cornmeal because I have this bag of cornmeal that needs to be used up and you can really only eat so much corn bread before you gain about 100 lbs. I'm not sure if this recipe is any better for avoiding weight gain (at least these are baked, not fried), but it was fun to try out and the kids enjoyed the results! Some turned out a bit odd shaped but they were good with some tangy salsa! You can turn them into nachos too.
I found the recipe off of Luscious Recipes.

Ingredients
1/2 cup yellow cornmeal
1/2 teaspoon salt
1 teaspoon margarine
3/4 cup boiling water
1 cup boiling water
Directions
1. Preheat oven to 425*F.
2. Combine cornmeal and salt in a mixing bowl.
3. Pour in 1 cup of boiling water and stir.
4. Add butter and stir until melted.
5. Add remaining 3/4 cup boiling water, while stirring constantly.
6. Drop mixture by heaping teaspoonfuls onto a well-greased baking sheet and bake for 14 to 15 minutes.

Today I'm hosting a Favorite Ingredients Friday Mexican Dishes Edition recipe exchange!
Today I'd like to share a recipe that I found on Recipe Zaar. It's delicious! Enjoy!
Steak Fajitas
Ingredients
3/4 lb top sirloin steak
2 tablespoons olive oil
1 tablespoon lime juice
1 garlic clove, finely minced
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon hot pepper flakes
1/2 teaspoon black pepper
1/2 teaspoon salt
8 flour tortillas (8 inch/20 cm)
1-2 onions, approx. 1-2 depending on size
2 small sweet peppers, of your choice (green, red, or yellow)
Toppings
salsa
sour cream
shredded cheese
chopped tomato
Directions
Slice steak into thin strips.
In bowl, mix together 1 tablespoons olive oil, lime juice, garlic, chili powder, cumin, hot pepper flakes, black pepper & salt.
Add beef strips and stir to coat, set aside.
Wrap tortillas in foil and place in 350° oven for 5-10 minutes or until heated through.
Cut onions in half lengthwise and slice into strips, cut your peppers into strips.
6In large non stick skillet over medium high heat, heat remaining tablespoons of olive oil.
Add onions & peppers stirring for 3-4 minutes, until softened; transfer to a bowl and set aside.
Add beef to skillet, cook, stirring for 3-4 minutes or until they lose their red color.
Return onions and peppers to skillet; stir for about one minute.
To serve, spoon a portion of the beef mixture down the centre of each tortilla, top with your desired toppings , fold bottom of tortilla up over filling, fold the sides in, overlapping.

Georgian Green Beans
Ingredients:2 pounds fresh green beans, trimmed
3 tablespoons unsalted butter
1 large red onion, quartered and thinly sliced
2 cloves garlic, peeled and minced
1 1/2 teaspoons red wine vinegar
3 tablespoons chicken broth
salt and pepper to taste
3 tablespoons finely chopped cilantro
Directions:
Bring a large pot of lightly salted water to boil. Place green beans in the water, and cook about 3 minutes. Remove from heat, and drain in a colander. Place under cold water until no longer hot. Drain, and pat dry.
Melt 1 tablespoon butter in a medium skillet over medium heat. Stir in the onion and garlic, and saute until onion is tender. Melt remaining butter in the skillet, and mix in the green beans. Stir in the vinegar and broth. Season with salt and pepper. Mix in cilantro. Cover, reduce heat, and simmer 15 minutes, or until green beans are tender.

With Lent if full swing, I thought I'd offer up a seafood recipe. I made these the other night, threw them on a bed of mixed greens tossed with onions, cherry tomatoes, pecans, and a light vinaigrette dressing, YUM!!!
I found the recipe off of Kraftfoods.com.

Coconut Fried Shrimp
Ingredients
1 cup BAKER'S ANGEL FLAKE Coconut
1/4 cup flour
1 tsp. salt
1/8 tsp. pepper
1 lb. cleaned shrimp
1 egg, slightly beaten
oil for frying (canola, corn, peanut, safflower or soybean)
Directions
1. MIX coconut, flour, salt and pepper. Dip shrimp in egg; roll in coconut mixture.
2. HEAT oil in large deep skillet on medium heat to 325°F.
3. ADD shrimp; cook 3 to 4 minutes on each side or until golden brown. Drain on paper towels. Serve with lemon wedges or a sauce, if desired.

Last month I posted a recipe for a fabulous bread machine pizza dough that works like a charm every time!
Today I'm hosting a Favorite Ingredients Friday Homemade Pizza Edition recipe exchange!
Today I'd like to share a homemade pizza recipe that I found on one of my favorite food blogs, Simply Recipes. I think you're going to like this as much as I do!

Meatlovers Pizza
Ingredients
Olive oil
Cornmeal (to slide the pizza onto the pizza stone)
Tomato sauce
Mozzarella or Parmesan cheese, shredded
Feta cheese
Mushrooms, thinly sliced
Bell peppers, stems and seeds removed, thinly sliced
Italian sausage, cooked ahead
Chopped fresh basil
Pesto
Pepperoni, thinly sliced
Onions, thinly sliced
Sliced ham
Directions
Spoon on the tomato sauce, sprinkle with cheese, and place your desired toppings on the pizza.
Sprinkle some cornmeal on the baking stone in the oven (watch your hands, the oven is hot!). Gently shake the peel to see if the dough will easily slide, if not, gently lift up the edges of the pizza and add a bit more cornmeal. Slide the pizza off of the peel and on to the baking stone in the oven.
Bake pizza until the crust is browned and the cheese is golden, about 10-15 minutes. If you want, toward the end of the cooking time you can sprinkle on a little more cheese.
