Slow Cooking Thursday (Corn Chowder)

Time to participate again in the slow cooker recipe exchange that Sandra over at Diary of a Stay at Home Mom hosts each week. This one satisfies my craving for warm and hearty soup in the winter and fall months. It's a quick and easy recipe and quite yummy! :)

Corn Chowder

Ingredients:
  1. 2 cans (16 oz) whole kernel corn, drained
  2. 3 to 4 medium potatoes, chopped
  3. 1 onion, chopped
  4. 1/2 teaspoon salt
  5. pepper to taste
  6. 2 cups chicken broth
  7. 2 cups whole milk or half-and-half
  8. 1/4 cup butter or margarine
  9. bacon bits

Preparation:

  1. Combine first 6 ingredients in slow cooker.
  2. Cover and cook on low for 7 to 9 hours.
  3. Puree in a blender or food processor, if desired, then return to pot.
  4. Stir in milk and butter; cover and cook on HIGH about 30 to 60 minutes longer.
  5. Garnish with bacon bits before serving. (optional)

Makes 6-8 servings.

Yum-O! I just saved it in my recipe folder. Corn Chowder is one of my favorites but never tried to make it at home.

Have you ever had Mimi's Cafe? They have the best CC in the world.

I have made this many times but never thought to do it in the slow cooker! Yea! Also, regarding the food processor or blender: I blend HALF of it, making a wonderful creamy base but leaving half in chunks. It's great that way :-)
