Favorite Ingredients Friday (Strawberry Stuffed French Toast)

Good Friday to you all! I'm trying to get back on track with posting regularly again, so I hope you'll join me in this recipe exchange today because it's time for another Favorite Ingredients Friday recipe exchange!

Breakfast is one of my favorite meals of the day, although we don't always take the time to make a nice, sit-down breakfast. The recipe I'm about to share is one that I found on Disney Family Food. My family loves this one. You can use raspberries instead of strawberries if you'd like.

Strawberry Stuffed French Toast
Ingredients:
8 slices white or wheat bread, cut 1 inch thick
8 ounces cream cheese
6 tablespoons strawberry preserves
1-1/3 cups milk
4 eggs
2 teaspoons granulated sugar
2 teaspoons vanilla
1 teaspoon cinnamon
4 tablespoons powdered sugar
4 cups sliced strawberries

Preparation:
  1. Cut each bread slice in half crosswise. With a sharp knife cut a horizontal slit in each half slice to make a pocket.
  2. In a medium bowl, combine cream cheese and preserves. Spread 1/16 (approximately) of the mixture inside each bread pocket.
  3. Pinch edges of bread together to hold filling.
  4. In a shallow bowl, whisk together milk, egg, sugar, vanilla and cinnamon. Dip filled bread slices in egg mixture to coat. Cook about 6 minutes or until golden brown, turning once.
  5. Top with strawberries and sprinkle with powdered sugar.

I've tried other stuffed French Toast recipes to find out that they needed something else! This one with the preserves might have it all...
