Favorite Ingredients Friday (Carrot Cake)
Good Friday to you all! It's time for another Favorite Ingredients Friday recipe exchange! I can't wait to see what you all come up with.

The recipe I'm about to share was given to me by a co-worker named Paul. He got it from his mother. He swears it's the best carrot cake you'll ever taste. I like to dress up my cake with these fun frosting carrots on top and walnuts/pecans around the side. Enjoy! :)
Paul's Carrot Cake
Ingredients
1 3/4 c sugar (- 2 Tbsp)
1 1/4 c Wesson oil (+ 2 Tbsp)
4 eggs
2 c flour
1 tsp baking powder
1 tsp salt
1 tsp baking soda
1 3/4 c sugar (- 2 Tbsp)
1 1/4 c Wesson oil (+ 2 Tbsp)
4 eggs
2 c flour
1 tsp baking powder
1 tsp salt
1 tsp baking soda
2 tsp cinnamon
3 c finely grated raw carrots
1/2 c chopped walnuts or pecans
1/4 c golden raisens
Preparation
Cream sugar & oil until light and fluffy. Add eggs one at a time, beating after each addition.
Sift driy ingredients. Slowly add to creamed mixture & beat just until mixed. Fold in carrots & nuts. Bake in three 9" round cake pans (greased & floured) for 20 minutes in a 350 degree oven.
Preparation

Now, you can't have carrot cake without cream cheese frosting, so here's that recipe as well!
Cream Cheese Frosting
Ingredients
1 (8 oz) package cream cheese
1/2 stick butter (4 Tbsp), not margarine
1 lb powdered sugar
1 small can crushed pineapple, well drained
Preparation
Mix together the cream cheese, butter, and vanilla. Slowly add powdered sugar and then the crushed pineapple. Make sure the pineapple has been well drained or the filling/frosting will be too runny! This should be enough to frost a 3 layer cake, providing the filling between the layers.

I love, love, love carrot cake. But I've only made it once when I grated part of my finger with the carrots. So then I had to eat the whole thing myself!

Too bad this was not up yesterday. My husband loves carrot cake and it was his birthday. I just dug out a box cake that that had been hiding in the pantry.
